I suck at baking. It just makes me nervous. One slip, and you’ve potentially ruined the recipe. Like Friday night when I was putting together a clafoutis… I dumped a cup of sugar in to the mixing bowl, then realized the recipe only called for 1/2 cup. Cut to me trying desperately to carefully spoon sugar out of the bowl without disturbing the eggs and butter. Sigh.
Yesterday’s creation: Chocolate zucchini cupcakes. Apparently I like doubling only part of recipes, as I poured in two teaspoons of vanilla extract instead of one. They turned out fine… I can’t help but wonder if they would have been better with half the vanilla, though.
But I’ll keep trying.
